Now that I’m nearing the end of my vegan pregnancy, it’s time to start preparing for our sweet baby’s arrival! The last several weeks I have been prepping for postpartum by making tons of different vegan freezer meals. I want to enjoy the time with my newborn and get into a new routine as a family without worrying about what we’re going to eat for dinner that night.

Whether you’re also planning for a baby’s arrival, needing some extra meals on hand, or just want to stock your freezer with delicious vegan meals, this is the post for you!

Our freezers are packed full of different breakfast and smoothie items and a wide variety of dinner options.

Initially it took a lot of planning and work, but I know once baby arrives, I’ll be so grateful that I took the time to do this!

Plus, this will ensure I’m getting tons of different nutrients and a wide variety of healthy foods while breastfeeding.

Make a Plan

First, decide which meals will be best frozen. I started on Pinterest and searched for vegan freezer meals. Then, make a list of what foods you want to make.

Next, make your grocery list and get started!

Then, have a goal for making the meals. Will you do it all in one weekend? Spread it out over several weekends? Or do it throughout the week?

What worked best for me was to spread out all of the cooking over several weekends. And during the week, I could easily throw a bunch of ingredients into a slow cooker or Instant Pot and let it simmer all day.

Another thing to consider is how you will package and store your meals in the freezer. I purchased various eco-friendly and biodegradable storage containers and reusable ziploc-type bags. I also have been saving large pasta jars and reusing them as class containers for chili, soup, etc.

And finally, package and freeze all of your meals. Then later on, defrost, reheat, and enjoy delicious meals stress-free! 😍

Breakfast

These meals store well in the freezer:

  • Smoothies
  • blend and store in the freezer
  • or, package all ingredients together in an airtight container and remove from freezer; then, blend in a blender with plant based milk
  • Breakfast burritos
  • Vegan egg casseroles and quiches
  • Muffins

Plus, stock your freezer with bread, bagels, and other breakfast foods.

Dinner

These meals store well in the freezer:

  • Soups, stews, and chilis
  • Curries
  • Pasta sauces (cook the pasta while the pasta sauce defrosts and reheats)
  • Lasagna and lasagna rolls
  • Enchiladas, quesadillas, and burritos
  • Vegan burgers and bean loaves

Other easy meals

If freezer space is limited, there are other meals that can be prepared quickly as well. Just make sure you have well stocked pantries and refrigerator/freezer.

  • Premade vegan burgers with potatoes and other roasted vegetables
  • Salad
  • Overnight oats
  • Slow cooker or Instant Pot meals

Putting in a lot of thought, planning, and time preparing meals ahead of time takes away so much stress later on! I know once our sweet little bub is here, I’ll be so glad I took the time to prepare plenty of food for our family in advance.
