Labor Day Weekend Vegan Cookout — A Case For Plant Based
Another summer holiday is upon us! Cookouts can stir up anxiety in some vegans, but I’ve got you covered! Check out these recipes and menu ideas for a vegan friendly Labor Day weekend BBQ cookout. 🌱
If burgers are on the menu, try substituting with a veggie burger, portobello, or eggplant pattie. For a more traditional beef-like texture and flavor, I recommend Beyond Burgers. Top with this delicious pistachio buffalo cream sauce and your favorite veggies.
Also try this vegan aioli with roasted potatoes. 🌱
Ok, I was pretty impressed with how much these looked like actual chicken breasts. The flavor was also really good, but the texture was off. I probably overworked the dough, and I made them too thick. Will definitely be attempting again!
Hearty and “meaty” like mushrooms, eggplant steaks are a great option. Marinate or season the eggplant with spices.
Eggplant can be mushy and bitter if not prepared correctly. The best way I have found to prepare eggplant is slice it, salt both sides, and place the slices between paper towels. Add a little weight on top to get rid of that extra moisture. Leave for at least 30 minutes (and up to 2 hours). Then rinse the eggplant and pat dry. Prepare as desired.
My favorite eggplant steak recipe is this teriyaki glaze. If you prefer not to grill, bake at 400 degrees for 20 minutes, flip, and bake for an additional 10–20 minutes. Enjoy!
Fresh corn is a must on the official end to summer menu. Cucumbers and corn are my go-to veg in the summer! This salad is easy to make and packed full of freshness and flavor.
